cacao scale

We use an Italian Escali scale off Amazon [US$23-25] and they have worked well over many years. For traveling, [lighter weight and smaller] we use an American Weigh Scales Black Blade Digital Pocket Scale, BL-1KG-BLK 1000 by 0.1 G off Amazon, US$11-12 [if you do microdosing [with your cacao?] get the 0.01 but it only weighs to 100 gm, a problem if you weigh your water.

cacao bliss ball

1-lb Keith’s cacao chopped finely 
1 cup Almond butter

1 cup tahini
1 cup finely ground coffee
1 cup honey
1 cup raisins
1 cup shredded coconut 
3 Tablespoons ginger powder 
3 Tablespoons of cinnamon 
1 teaspoon nutmeg
1 teaspoon cloves 
1 teaspoon cardamom
Essential orange and rose oil

 400g coconut oil
400g coconut sugar
150ml coconut cream

1 medium green banana
200g (ish😉) Keith’s Cacao
400g buckwheat flour
1/4 cup baking powder 
Cream the oil, sugar, cream,banana, Cacao until even ly mixed
Add in Flour, finally quickly mix in baking powder. 
Place in 2 trays and bake at 180C for approx 15 mins. Or until firm. 
Icing 
1 1/2 cups Cashews
150ml Coconut cream
150g Cacao
Tble spoon coconut oil
1/2 cup Xylitol

Blend until smooth and Ice the cake. 
I also Place a fresh raspberry coulee in the middle before the icing.

Ingredients
2 bananas
2 cups wild blueberries 
1 cup cilantro 
1 cup orange juice 
1 tsp barley grass juice powder 
1 tsp spirulina 
1 small handful of Atlantic dulse 
Optional: water to blend

潮州芋頭糕

潮州芋頭糕
  1. 2人份 
  2. 芋頭《刨絲》 200g
  3. 蔥頭《切片》 2粒
  4. 蝦米《剁碎》 25g
  5. 食油 1小匙
  6. 粘米粉《在來米粉》 30g
  7. 食水 250ml
  8. 鹽巴 少許
  9. 胡椒粉 少許
    chinese 5 spice 

1 預先調麵糊,粘米粉30g 食水250ml 鹽巴少許 胡椒粉攪拌均勻,待會加入。 取出鍋下1小匙食油爆香蔥頭蝦米,加入芋頭絲炒3分鐘。
2 將麵糊加入炒香的芋頭絲攪拌均勻。
 然後盛在抹了油的盤子上,大火蒸20分鐘即可
